(Based on Experience) Schedule: Monday to Friday Position Summary: Responsible for precision portioning, master trimming, and showcasing premium meat and seafood products to the highest culinary standards. Essential Functions: Collaborates with supervisors and production managers to coordinate daily production schedules and workflow. Hand-crafts, trims, slices, and portions subprimals of premium beef, pork, lamb, veal, and seafood to exacting customer specifications. Carefully inspects all incoming and outgoing product for quality, consistency, and standard compliance. Accurately reads, interprets, and executes detailed customer-specific special instructions with precision. Performs quality control checks, maintaining open communication with supervisors and management regarding product standards. Organizes products and byproducts efficiently into designated containers, ensuring proper sealing, tagging, and tracking. Safely and skillfully operates specialty cutlery, cleavers, and production tools to perform clean trimming and portioning. Accurately weighs products, tags containers for precise weight and content verification, and manages yield logs. Upholds and aligns work with the company’s detailed product specifications and artisan quality standards. Performs other duties as assigned to support overall team production goals. Knowledge / Skills / Abilities: Working knowledge and hands-on experience with commercial production and processing equipment. Proven track record of portioning accurately, efficiently, and in a timely manner. Strong focus on maximizing yield efficiency and reducing processing costs through precise cutting, portioning, and customer specification alignment. Excellent problem-solving skills regarding yield optimization, custom trimming, and appropriate product substitutions. Ability to excel in a fast-paced, high-volume production environment while maintaining product excellence. Strong team player with a positive attitude, safety-first mindset, and commitment to the team. Clear effective verbal and written communication skills in English. Strong understanding of Meat Buyer’s Guide specifications as they apply to internal specs and customer requirements. Consistent adherence to company Quality Control procedures and food safety standards.
